Meatless Monday: Zucchini
Ahhh… zucchini… many people have a love/hate relationship with this cousin of the cucumber. I guess I can understand why. When it’s cooked it tends to get soft and the mouth feel isn’t appealing to all. But to me it is de-licious!!! Hence, we have our second meatless Monday featuring zucchini.
Why zucchini? Well it’s honestly a pretty healthy vegetable. Not only is it low in calories, but it’s high in water content and fiber which helps you feel satiated but without packing on a bunch of calories (that is, if you’re counting). This crazy green veggie also has several vitamins and minerals such as manganese, vitamin C, vitamin B6, omega 3 fatty acids, and zinc. So it’s a virtual powerhouse.
Studies have demonstrated that consuming zucchini can have positive effects in reducing symptoms of benign prostatic hyperplasia (BPH), as well as, rheumatoid arthritis. Other studies have shown that it also helps protect individuals from certain cardiovascular events such as atherosclerosis. With all that, how can you say no to zucchini?!?!
When I was researching recipes I wanted to provide you guys with options that were different and still relatively healthy. I did have a difficult time finding vegan recipes but I did find several vegetarian options (read: cheese will be plentiful in these dishes). AND I found a desert option for you guys. Stop frowning! It looks good!
- Baked Zucchini “Meatballs”
I liked this one because it’s a good alternative for vegetarians who tend to purchase those faux meat products. Not that I have anything against them because those faux meatballs are amazing! But in an effort to reduced packaged foods, this is a good option. I just need to find a way to make it vegan.
- Zucchini Crust Pizza
If you frequent Pinterest I’m sure you’ve seen recipes for the cauliflower pizza crust. This is another lower carb option using zucchini.
- Zucchini Pizza Boats
This is another “pizza” recipe but this time you make the pizza on top of a halved zucchini. You can easily make it meat free by omitting the pepperoni
- Black Bean Zucchini Burger
A black bean burger you can make at home! Yeah, the packaged ones are good but at least you know what goes into this one. 🙂
- Zucchini Waffles
Let’s take a minute to pause really quick. I’m just saying… zucchini and waffles? It’s brilliant! I bet you can’t even taste the zucchini. This is a must try.
- Flourless CHOCOLATE Zucchini Muffins
Will you look at this?!?! I’m just saying… it’s chocolate… it has veggies in it… and it’s CHOCOLATE! LOL. Everyone has to try this just to say they tried it! And it says it only takes 25 minutes to make! Winner!!
So here are 6 new ways to prepare zucchini on this Meatless Monday. I challenge those who claim to dislike zucchini try at least one recipe to see if simply cooking it differently would improve things for you. I know I’m definitely trying those muffins… for the kids of course.
