Today’s post comes a little late. But hey, better late than never. I am really trying to be consistent with posting ideas for Meatless Monday so… here I am (gold star for me!). This week’s meatless Monday veggie feature is mushroom.
Mushrooms are an awesome vegetable (technically a fungus) that come in different varieties and have amazing health benefits. Mushrooms have been shown to have the following health benefits:
- Lowers blood pressure and cholesterol levels
- Protect diabetics from infections
- Prevents breast and prostate cancer
- Enhances the immune system
- Stimulates the absorption of iron
- Helps people lose weight
- Is a good source of B vitamins, copper, and selenium
So with all these benefits why not add mushrooms to the mix?
I am a fan of mushrooms so using it in place of meats in certain dishes is not a foreign concept to me. I have tried almost all of the following with excellent results so definitely consider trying at least ONE of these dishes.
If you eat dairy products add cheese to make it feel more authentic. lol. But there are some pretty good plant based cheeses you could use too.
You could add this to a tortilla or a sandwich… even on top of some pasta!
Use the bacon to make BLT’s or as a side for your breakfast! YUM!!!
