It’s Memorial Day! The official start of the summer BBQ season. Just because you eat a plant based diet does not mean you can’t enjoy food from the grill too! Have you ever had grilled corn on the cob? Grilled veggies? Grilled FRUIT?!?!? *drool* Today, in line with the holiday, meatless Monday will focus on homemade veggie burgers!
Why Make Them When You Can Buy Them?
Store bought veggie burgers are okay when you’re in a pinch but NOTHING compares to a home made veggie burger. To me it’s like comparing a Hostess Cupcake to one that’s made from scratch or, to take it further, comparing McDonald’s to your Mom’s cooking! SMH. There’s no comparison! You know exactly what went into it, it’s fresh, you control the flavor, and you can add or remove ingredients you don’t like or are trying to avoid. Furthermore, they aren’t that hard to prepare.
But I don’t like beans…
It’s a misconception that veggie burgers are simply bean burgers. I remember once upon a time The Cheesecake Factory sold portobello burgers that were so good they made you want to smack your Momma! That is considered a “veggie burger”. So in this post I will provide options for those who are anti-bean because I understand. Some people just don’t like beans… heck I am so lucky (insert sarcasm) to live in a home where no one but me likes beans… like seriously?!?!? But I digress… lol.
So here are 4 veggie burger options that are sure to impress your meat eating friends and family. Give one or all of them a try and let me know how they turn out for you.
1. In-N-Out Burger Copycat:
This one spoke to my heart being a Cali girl. I used to LOVE In-N-Out burgers and still enjoy their veggie version! Alas…I’m no where near California. So to be able to make them at home?!?!?! Say WHAT! It is freaking AWESOME! The burger here is bean based so if you aren’t a fan of beans this one may not be the one for you… but you could still make the sauce and use the recommended toppings on a veggie burger of your choice.
2. “Big Mac” Burger with Radicchio Slaw
This burger is bean free and is filled with some great veggies that you may just have in your fridge right now! Perfect for fans of the Big Mac who want a healthier version.
3. The Epic Crispy Quinoa Burger
This thing right here looks flipping insane! She tops it with gruyere cheese and an egg over-easy which makes it vegetarian. If you’re vegan just skip those toppings and I’m sure it’ll still be flipping amazing. Tell me this one doesn’t look delicious!
This recipe is pretty simple. So if you have any vegans/vegetarians coming to your cookout unexpectedly… this is an excellent option to throw on the grill for them. It looks delicious and who doesn’t LOVE a slider!?!?
There you go! 4 pretty awesome veggie burger options to show off at your Memorial Day cookout. Enjoy!
