If you’ve never heard of, seen or tasted it before I suggest you try it for a Meatless Monday. I know what you’re thinking, “fruit for dinner?” YES!!! Believe me, you won’t regret it!
What is a jackfruit?
Jackfruit is a staple in some parts of Asia and is known as the world’s largest tree fruit. If you ever see a whole fresh one it is about the size of a hefty newborn baby! It’s a rather ugly fruit with a rough, spiky exterior and an interior that looks equally as strange. The edible part of the fruit is encapsulated in little pockets surrounded by fibrous flesh and contains a large seed. The texture is a mix between an unripe nectarine and a grape. LOL.
Jackfruit is packed with protein, calcium, iron, potassium and vitamin B. So not only will your meatless dinner taste great, you will get plenty of vital nutrients.
When the fruit is ripe it tastes and smells strangely like Juicy Fruit gum. However, when it’s not ripe or green, the taste is similar to a potato (maybe?) and can be used as a meat substitute. Finding a fresh green (or young) jackfruit in your local Asian market may be difficult; however, you can find them in cans packed in either water or brine which I recommend for ease of use and convenience. The cans can be purchased at your local Asian market (I’ve bought them for as little as $1.20 each) or you can buy them online on Amazon.
The recipes below are going to use the young green jackfruit. The green variety is the best for creating savory dishes that will mimic shredded meat. I’ve made a couple of these dishes for myself and my kids and we LOVED them. So try this out and let me know how it works for you.
These pulled “pork” sandwiches were a winner in my house. I’m not a mayo fan so I used mashed avocado and a hint of apple cider vinegar as a substitute in the slaw.
Shredded jackfruit, kale, pickles… on a sandwich. Can someone say YUM?!?!
Yes, carnitas are typically meat. But dammit… I’m a vegan and I want to eat good food! So here we are… a Jackfruit carnita. Make it… thank me later.
This??? I’m just saying, a little bit of sweet… a little bit of spicy… some crunch… AND it’s VEGAN?!?!? WHAAAATTTTT??? I’m just saying… try it!
So there you guys go! Four great recipes to try using jackfruit. If you’re cooking for a family, I will say that one can is enough for me and my 2 boys to have 1 serving each. So if the recipe calls for one can and you have a large family adjust to accommodate your people. I really do hope you guys try at least one of these recipes because they are crazy awesome.
