Grains… why would I create a Meatless Monday post that focuses on grains? Well….first, whole grains contain a lot of fiber. Fiber helps our body with constipation, helps us feel full, which can help with weight loss. Second, grains contain B vitamins, folate, iron, magnesium and selenium. Finally, you can create some easy one pot meals using grains which makes life a little easier.
There are several grains available for us to consume but many do not. Many know about rice, corn meal, and quinoa, but how many are familiar with barley or bulger wheat? Today I will highlight 4 meals that you can make to add some extra fiber and veggies into your Monday dinner.
This is a nice light dish you can prepare on those hot summer days. It’s full of awesome flavor and crunch that is likely to be a hit in your home.
This risotto is as rich as other risotto but without the added butter and cheese. The use of pearl barley is a plus in this recipe because you don’t have to stir as frequently as your do with arborio rice… which makes this a fairly easy dish to make.
I’m just saying… I have a soft place in my tummy for some flavorful grits with greens. *drool* This is a vegan option (read- it’s creamy with no cheese or butter) BUT it contains cashews. So if you have nut allergies you will want to avoid this one.
Finally we come back to our tried and true grain… rice. This is a crockpot meal which means it can cook while you’re working out or doing other things! So 2 hours on high… you get a delicious meal with very little work.
I hope you try one or all of these dishes out. Try adding more veggies and real food into your diet and edge out all the junk… you will notice a huge difference in your energy levels and (eventually) your waist line. Let me know if you try any of these and how it came out.
