Meatless Monday: Take 1
Many of you who know me know that I am a vegan. But I’m not one of those vegans who tries to force everyone I know to become vegan. I do occasionally share a horrific video or two about how you get your meat from factory farms and what goes into some of those processed meats many feed their kids… for educational purposes. For most people that I care about I simply encourage eating more vegetables and less meat, dairy and processed foods. Keeping with that I wanted to do Meatless Mondays on the blog to help encourage people to simply eat more veggies and find delicious recipes to do this.
Veggie of the Day: Cauliflower
In planning my meals for the week I looked in my fridge and noticed that I had a head of cauliflower that I’ve been ignoring for a while. So I decided why not? And I’m sure many of you reading who are not fans of this super food are saying “eww… why so?!?!?” Well… I’m glad you asked!
Were you aware that cauliflower is not only high in fiber but also contains several B vitamins, antioxidants and phytonutrients, choline, and over 70% of our recommended dietary intake of vitamin C in just one cup? This one vegetable is a great addition to your diet to help fight off cancer, reduce inflammation, enhance memory and learning, and help with digestion. Sooooo many benefits in just one unassuming vegetable!
So yeah, go get you some! LOL. To get my picky boy to eat the cauliflower I either roast it or saute it with broccoli and sell it as “white broccoli”. LOL. This time I really wanted to do something different with it. So I turned to my good friend Pinterest for help and found 4 really good looking recipes to choose from.
The first one is Buffalo Cauliflower bites. I know my oldest would LOVE these since he loves all things spicy. The little one however? NOT a fan of anything spicy so this one will have to be reserved for a day when I feel like making 2 separate meals.
The next one was Orange Cauliflower (kinda like orange chicken but with cauliflower). I still might do this one but I’m not usually a fan of sweet dinner options. I know the boys would LOVE it though.
The third one was super simple and would be good if it was just for me. I’m not too sure the picky one would be sold on this one. It’s a simple Roasted Cauliflower. It looks delicious!
The last one, and most likely the one I’ll cook, is a Miso Roasted Cauliflower. I think I’m a little biased being half Japanese and loving all things Japanese-y… but this one looks good. Plus I think everyone would be happy with this one.
